Mock Apple Butter – Marie Miller

Ingredients

  • 2 C pureed zucchini
  • 1 C sugar
  • 1 Tbsp lemon juice
  • 1 Tbsp vinegar
  • 1 tsp cinnamon
  • 1/2 tsp ground cloves

Directions

Peel, cube and cook zucchini until tender. Place in a blender and puree. Put in a large kettle. Add remaining ingredients. Cook .down as apple butter, put in quart jars and seal. Process in a hot water bath for 10 minutes. This bubbles and pops quite a bit when cooking down. It needs to be stirred quite a bit. 

1 large overgrown zucchini makes about 1 quart.
