Ingredients
- 1 lb. ground beef
- 3/4 cup chopped onion
- 1 16 oz can tomatoes
- 1 15 1/2 oZ, can pinto bean
- 2 cup cooked rice
- 3 T chopped green pepper
- 1 1/2 tsp. chili powder
- 1 / 2 tsp. salt
- 1 cup shredded American cheese
- 1 tsp. ground cumin Corn chips or tortilla chips 1/2 tsp. garlic salt
Directions
In a skillet cook ground beef and onion till meat is browned and onion is tender. Drain off fat ( you can cook your rice at the same time in a different pan. They both get done about the same time) Stir in undrained tomatoes, undrained beans, rice, green pepper , chili pepper, salt, cumin, and garlic salt. Bring to a boil. Simmer and stir for about 15 minutes. Add shredded cheese. Heat until the cheese is melted. Use chips to dip the mixture or crush chips and sprinkle around edges.
This is good after it has sat for a few days . Makes about 8 servings.
