Cowboy or John Wayne Casserole – Ken Fehrenbach

Ingredients

  • 1 lb Ground beef
  • 1 package Taco seasoning
  • 1 can Chile beans
  • 1-11/4 cup Crushed tortilla chips
  • 3/4 cup Onion diced, split 1/4 for frying ground beef 1/2 for layer.
  • 2 Tomato’s diced
  • ½ Green and red bell pepper diced
  • 1-3 jalapenos diced (optional to your liking)
  • 1/2 cup Sour cream or 8 oz.
  • 1/4 cup Mayonnaise (either this or 3/4 cup of sour cream.
  • 1/2 cup Mexican shredded cheese.

Directions

Brown ground beef with 1/2 cup of onion, add taco seasoning after browned then add the can of chili beans and simmer for 5 minutes. In a 9×9 pan add tortilla chips spread evenly on bottom. Add the ground beef/beans on top of the chips spread evenly. Mix 1/2 cup of onion, tomatoes peppers and jalapenos and layer on ground beef. Mix mayo, sour cream and shredded cheese and layer on top of casserole. Bake in oven at 350 for 30-40 minutes or until cheese layer begins to bubble, if you cook it longer the vegetable layer will not be crisp. Cool and serve.
