Chicken or Pork Adobo – Ken Fehrenbach

(Filipino Dish) 

Ingredients

  • 3 cloves of garlic sliced thin
  • 1/2 red onion diced approx. 1/2 in size
  • 1 rack of pork baby backs or 1 whole chicken
  • 1/4 cup of olive or coconut oil, any will do but trying to be healthy
  • 1/2 of a 3″ stick of cinnamon per rack or chicken (to taste)
  • 2 bay leaves per rack or chicken
  • 3/4 cup soy sauce
  • 1/2 cup vinegar
  • 1/2 red pepper sliced lengthwise

Directions

Slice ribs to individual or chop chicken up into approx. 20 pieces. Heat oil in a pan, add garlic and onion, stir until light brown and add the meat. I usually have a stove on high for this. Stir and cover to cook for 5 min. Add soy sauce, vinegar, cinnamon stick, bay leaves and 3/4 cup of water and let cook for 30 min on medium heat. Add red sliced and let meat cook until the meat is ready to fall off the bone. Serve with rice.
