Pumpkin Bars – Carlleen Fehrenbach

Main Ingredients

  • 2 c. sugar
  • 1/2 c. vegetable oil 
  • 1 16 oz. can pumpkin 
  • 4 eggs , beaten  
  • 2 c. Bisquick mix 
  • 2 tsp. cinnamon 
  • 1/2 c. raisin 
  • Cream Cheese Frosting

Directions

Heat oven to 350 degrees. Grease jelly roll pan. Beat sugar, oil, pumpkin and eggs in a large mixing bowl on medium speed, scraping bowl occasionally. 1 minute stir in baking mix, cinnamon and raisins. Pour into the pan. Bake for 25 – 30 minutes until done. Cool. Frost with Cream Cheese Frosting and cut into bars.

Cream Cheese Frosting Ingredients

  • 1 pkg. creamed cheese
  • 1/3 c. butter
  • 1 tsp. vanilla
  • 2 c. powdered sugar

Directions

Beat ingredients together until creamy, stir in powdered sugar and beat until smooth. Spread on cool pumpkin bars.
