Apple Pie Filling – Phyllis Miller

Ingredients

  • 4 1/2 C sugar
  • 1/4 tsp nutmeg
  • 1 C cornstarch
  • 2 tsp cinnamon
  • 12 C water
  • 1 tsp salt
  • 3 Tbsp lemon juice
  • yellow food coloring

Directions

Peel, core, and slice apples in 7 quart jars. Mix sugar, cornstarch, water, cinnamon, nutmeg and salt into a large kettle. Cook syrup until thick and bubbly. Add lemon juice and 3 to 4 drops of food coloring. Pour syrup over apples in a jar. Remove air bubbles and wipe tops and seal. Process in a hot water bath for 20 minutes. Add extra cinnamon if desired.

One quart jar makes 1 – 9 inch pie, used as regular pie filling. Makes 7 quarts
