Cinnamon Raisin Bread – Phyllis Miller

Ingredients

  • 1 1/2 c milk
  • 1 c rolled oats
  • 1 c raisin
  • 1/4 c sugar
  • 1/4 c shortening
  • 2 Tbsp cinnamon
  • 1/2 c warm water
  • 1 egg
  • 4 1/2 flour
  • 2 tsp salt
  • 2 pkg yeast
  • 1/2 c sugar

Directions

Scald milk, pour over oats, raisins, 1/2 cup sugar, shortening, and salt. Stir until mixed, cool. Soften yeast in yam water. Add beaten egg. Add flour gradually, mix to soft dough. Knead until smooth ( about 10 min.) on a floured board. Shape in ball. Place in a bowl. Cover and let rise until doubled, 1 hour. 

Punch down on board. Divide and let rise 10 min. Mix cinnamon and 1/2 cup sugar. Roll out 1/2 dough. Sprinkle with cinnamon mixture. Roll up dough. Place in a greased loaf pan. Do the Same with the other half of the dough. Cover and let rise until doubled. Bake at 350° until brown and when tapped it sounds hollow. Makes 2 loaves.
